Like all of our recipes, you can throw this salsa together in no time! You will need 1 pineapple, 2 limes, 1 cup of diced tomatoes, 1/3 cup of chopped cilantro, 1/4 cup of diced red onion, 1 diced and seeded jalapeno (optional), and a dash of salt and pepper.
To prepare the pineapple salsa bowl slice the pineapple horizontally so that about 1/4 of the side is sliced off. Make sure to keep the stem attached.
Using a sharp knife slice the inside of the pineapple horizontally and vertically, loosening up the insides. Continue slicing until you have noticed the insides becoming loose.
Then take a spoon and scoop out the insides of the pineapple. Place aside a cup and a half of the pineapple and dice it up, like the tomatoes and onions.
Mix together the pineapple, tomatoes, onion, cilantro, salt, pepper, juice from two limes, and optional jalapeno in a bowl.
