Using a sharp knife slice the inside of the pineapple horizontally and vertically, loosening up the insides. Continue slicing until you have noticed the insides becoming loose. Healthy pineapple salsa

Then take a spoon and scoop out the insides of the pineapple. Place aside a cup and a half of the pineapple and dice it up, like the tomatoes and onions.

  • 1 pineapple
  • 1 cup Roma tomatoes, diced
  • 1/3 cup chopped cilantro
  • 1/4 cup red onion, diced
  • Juice of 2 limes
  • 1/2 Teaspoon salt
  • 1 dash of freshly ground pepper
  • 1 jalapeno, diced and seeded (optional)

  1. First create your pineapple bowl by slicing 1/4 of the pineapple off horizontally. Make sure the stem is still attached. Then cut the insides horizontally and vertically to loosen up the pineapple flesh.
  2. Using a knife and a spoon, scoop out the pieces of pineapple. Once most of the insides of the pineapple are out use a paper towel to soak up most of the juice.
  3. Then dice 1 1/2 cups of the pineapple you scooped out.
  4. In a medium bowl mix together the diced pineapple, tomatoes, cilantro, onion, lime juice, salt, pepper, and jalapeño (optional).
  5. Transfer the mixed salsa into your hollowed out pineapple bowl and garnish the top with some cilantro. For best results let the salsa marinade together for two hours in the fridge before serving.
